This tutorial by Peter Ratner will take you through the process of creating a human model. The software that was used was Lightwave 3D but it should work with any program that has subdivision modeling.

 This is a great tutorial by Michel Roger for learning modeling. Most of the techniques can be easily translated into Wings 3D.

Although primarily for 3D Studio Max, most of the modeling techniques used in modeling Joan of Arc can be done with Wings as well. Give it a go. Its an excellent way to practice for organic modeling. Thanks to 3dtotal.
